5-ingredient homemade bounties

This recipe was inspired by my Dad: each time we would stop at a gas station he would grab a bounty at the cashier and I would always get a bite of it. Today, neither of us can eat them anymore so I started making them at home. Anyways, anything homemade is best.

These bounties have an extra layer of dates but it’s totally optional, you can only also just go with the three main ingredients:

Prep Time 20 minutes
Resting time 2 hours
Total Time 2 hours 20 minutes
Servings 25 pieces, approx

Equipment

  • Highspeed blender
  • Baking paper
  • Glass or other square container, I used 20x20cm

Ingredients

  • 80 g dates Medjool or other
  • 80 g raw cashews
  • 200 g coconut shreds
  • 70 g maple syrup
  • 100 g dark chocolate
  • Pinch coarse salt optional

Instructions

  • Blend the dates and raw cashews until it forms a paste.
  • Line a square container with baking paper and flatten the paste at the bottom of the container. Place in the fridge.
  • Blend the coconut shreds and maple syrup until the well combined. Flatten the coconut mix on top of the date and cashew paste. Place in the fridge for 1 hours or in the freezer for 30 min.
  • Cut the bountys in equal squares or bars. Melt the dark chocolate in a bain-marie. Once the chocolate is melted, turn off the bain-marie.
  • With 2 spoons or forks, gently place the naked bounty pieces, one square at a time, in the melted chocolate. Turn them around until they are covered in chocolate. Place them on a cooling rack, baking sheet or plate. Sprinkle some coarse salt and another crunchy ingredient of your choice: granola or dired coconut.
  • Let them chill in the fridge for 1 hour. Enjoy!

Notes

  • These bounties can be kept in the fridge for up to 2 weeks.
