Ingredients
250g oats
100g raw almonds (desiccated or whole)
150g maple syrup
20g olive oil
3g cinnamon
2g salt
Instructions
Preheat oven to 200°C and line a large baking sheet with parchment paper.
In a bowl, combine all dry ingredients with a wooden spoon or spatula.
If your almonds are not desiccated yet, you can quickly pass them whole in the blender to break them into smaller pieces.
Add the maple syrup and olive oil then mix everything together until the oats are fully coated.
Pour the granola onto your pan and use a large spoon or spatula to spread it in an even layer.
Bake until lightly golden, about 10-15 minutes and stir the granola halfway.
Don’t overbake the granola, just until it’s lightly golden on top. It might not seem like it’s cooked yet, but it will continue to take its final crispy texture as it cools down.
Let the granola cool completely and top with your favorite dried fruit or chocolate chips.
For this recipe, I added dried figs and hemp seeds.
