Chocolate Chip Banana Muffins

Ingredients

3 very ripe bananas

50g maple syrup

30g olive oil

160g flour (regular or gluten-free)

5g baking powder

2g baking soda

Pinch of salt

3 to 5g cinnamon (to taste)

Optional dark chocolate chips

Optional walnuts

Instructions

Preheat oven to 200°C

In a bowl, mix the flour, baking powder, baking soda, salt and cinnamon

In your blender, mix the ripe bananas, maple syrup and olive oil until smooth

Slowly pour the banana mixture in the initial flour mixture while whipping

Whisk everything together until smooth

Pour the batter in the muffin molds. If you don’t have paper muffin holders, add a little oil to the muffin molds so the muffins don’t stick to it.

Add your chocolate chips and walnuts to the batter and mix gently.

Bake in the oven for 20 min at 200°C

Enjoy with a glass of almond milk, hot chocolate or with your morning coffee!
