5-Ingredient Vegan Bounties

This recipe was inspired by my Dad: each time we would stop at a gas station he would grab a bounty at the cashier and I would always get a bite of it. These bounties have an extra (and optional) layer of dates, you can only also just go with the three main ingredients:

  • Coconut shreds

  • Dark chocolate

  • Maple Syrup

Details

Serving: 10 to 12 bounty bites

Prep time : 30 minutes

Cooling time: 3 hour

Total time: 3 hour and 30 minutes


Ingredients

  • 80g dates (medjool or other)

  • 80g raw cashews

  • 200g coconut shreds

  • 70g maple syrup

  • 100g dark chocolate

Method

  1. Blend the dates and raw cashews until it forms a paste.

  2. Line a square container with baking paper and flatten the paste art the bottom of the container. Place in the fridge.

  3. Blend the coconut shreds and maple syrup until the maple syrup is well incorporated. Flatten the coconut on top of the date and cashew paste. Place in the fridge for 2 hours or in the freezer for 30 min.

  4. Cut the bountys in squares. Melt the dark chocolate with a bain-marie. Once the chocolate is melted, turn off the bain-marie. With the help of 2 spoons or forks, cover the naked bounty squares with chocolate then place then on a cooling rack, baking sheet or plate.

  5. Place in the fridge for 1 hour. Enjoy!
